Gingersnaps remind me so much of my childhood. My mom was never one to store treats in our home, now that I am a mom I know why- because I eat them. But there is one treat that you could always find at our house in the bottom shelf of the pantry, gingersnaps. These were store bought, small hard cookies. Maybe you remember them? The kind that scratch the roof of your mouth if you take too big of a bite. There was something about the flavor that made everyone sneak a couple of cookies from the cupboard.

Blueberry Dessert

Blueberry Desert: graham cracker crust, cheesecake topped with blueberry pie filling.

A Teaspoon of HomeNothing reminds me more of my Grandma Bevan than this dessert.  As a child I would scrape off all of the blueberries onto the side of my plate and funny thing, I still scrape them off before I take a bite. I love all the flavor burst in such simple dessert. This was a regular treat at grandmas, probably because it is so easy to make. Making it for my family brought back so many great memories.

Peach Cobbler

Welcome summer! How can you celebrate summertime without some sort of cobbler? I love cobbler in dutch ovens but how often do you pull that heavy pot out to cook over your fire?

This cobbler recipe is so simple and can be used over any type of fruit. I chose peaches because we are starting our harvest and have more than we can eat.

Peach Cobbler

Ingredients

  • 8 large peaches
  • 1 cup flour
  • 1 cup sugar
  • 1/2 t salt
  • 1/4 cup shortening
  • 1 egg
  • 1 t baking powder

Instructions

  1. Grease 8" square baking pan.
  2. Peel and slice peaches into pan.
  3. Combine remaining ingredients into dough and crumble dough on top of peaches.
  4. Bake at 350 degrees for 30 min.
  5. Serve warm with vanilla ice cream.
