Ingredients

• 4 cups carrots sliced or baby
• 3 tablespoons butter
• 1/3 cup apricot preserves
• 1/4 teaspoon salt
• pinch nutmeg
• 1/4 teaspoon freshly grated lemon peel
• 2 teaspoons lemon juice

Prep Time 20 minutes Cook Time 10 minutes Servings people Ingredients 4 cups carrots sliced or baby 3 tablespoons butter 1/3 cup apricot preserves 1/4 teaspoon salt pinch nutmeg 1/4 teaspoon freshly grated lemon peel 2 teaspoons lemon juice

Instructions

1. In a medium-size saucepan cook carrots until crisp and tender (about 8 minutes).
2. Drain and set aside.
3. Melt butter in a skillet, stir in preserves.
4. Add all other ingredients, except carrots, and cook briefly.
5. Toss in carrots and cook just long enough to heat thoroughly.
