Combine your two favorite treats.

The two most famous treats are cookies and brownies. These brookie cookies are literally a brownie and a chocolate chip cookie in one treat. A rich chocolate fudge brownie on one half and a sweet chocolate chip cookie on the other.

These cookies are great for sharing. You can take your favorite half or break it right down the middle. We love dipping them in milk when we eat them too.

Instructions
  1. First make the chocolate chip cookie dough. It must chill while you prepare the brownie dough.
  2. In a medium sized bowl whisk together the flour, baking soda, and sea salt; set aside.
  3. In a large bowl using a handheld electric mixer, or in a stand mixer, beat the butter on medium speed until smooth. Add the sugars and vanilla and beat on medium speed until the mixture is pale and fluffy; about 2 minutes.
  4. Add in the egg and beat. Gently fold in the flour mixture with a rubber spatula, stirring only until the flour begins to disappear. Fold in the chocolate chips.
  5. Cover the bowl with plastic wrap and place it in the fridge for 30-45 minutes.
Putting it all together.
  1. Preheat oven to 350 degrees. Line 2 large baking sheets with parchment paper and set aside.
  2. Using a cookie scoop (I used 2 tablespoon size), scoop the cookie dough onto the parchment paper allowing 2 inches between each scoop.
  3. Then scoop the brownie cookie dough directly next to each ball of chocolate chip cookie dough.
  4. Join the two cookie doughs by gently pinching them together, be sure to adhere any gaps.
  5. Place baking sheets in preheated oven and bake for 12 minutes, or until the edges and tops are set but the centers still look slightly underdone. Let cookies cool for 10 minutes on the baking sheet before transferring them to a wire rack to cool.

I like to use my 2 tablespoon cookie scoop so the finished cookies are gigantic. Literally the size of my hand. You can use a smaller scoop and get a smaller cookie. I just like to mix it up sometimes and make them larger than life.

They are quick to make too. You make the cookie dough first and let it chill while you mix up the brownie mix. Then scoop the cookie dough. Next scoop the brownie mixture right next to the cookie dough. It is a little sticky but you mold it into a circular form. Then bake and enjoy!

When I was in college I met one of my best friends. Her name is Brooke and made the most delicious cookies I think I have ever eaten. I always called her Brookie, still do. So these cookies remind me of her. If you like brownies try my skillet brownie sundaes, they are a real treat!
