  4. Add the flour mixture to the peanut butter mixture and mix together. Scoop in tablespoonfuls of dough and roll into balls.
  5. Place the cookies 2 inches apart on parchment lined cookie sheets. Bake for 8-10 minutes at 375 degrees. Don't overcook! The cookies are much better slightly undercooked.
  6. Immediately after removing the cookies from the oven, gently press a Reese's Thin Peanut Butter Cup in the center of each cookie. Allow the cookies to cool and the chocolate to set up before serving.

These bars combine the chewy, buttery goodness of a classic blondie with everything we love about s’mores — graham crackers, melty chocolate, and toasted marshmallows. No campfire required. Just one bite and you’ll be hooked.

S’more Blondie Bars

Ingredients
  

  • 1 1/2 cup Butter, softened
  • 1 1/2 cup Brown Sugar
  • 2/3 cup Granulated sugar
  • 2 eggs
  • 4 tsp Vanilla extract
  • 18 Graham Crackers crushed (about 2.5 cups)
  • 3 cups Flour
  • 2 tsp Baking Powder
  • 1 tsp salt
  • 6 Hershey Bars (1.55 oz each)
  • 14 oz Marshmallow Creme

Method
 

  1. Preheat oven to 350 degrees
  2. Crush or blend the Graham Crackers into crumbs.
  3. In the bowl with a stand mixer, cream together the butter and sugars. Add egg and vanilla and mix well.
  4. Add the graham cracker crumbs, flour, baking powder, and salt. Mix until a crumbly dough forms.
  5. Line a 9×13 inch baking pan with parchment paper. Press 2/3 of the cookie dough into the pan.
  6. Unwrap six Hershey bars and layer them over the cookie dough.
  7. Spoon the marshmallow creme over the chocolate bars and spread it out. Then sprinkle the remaining cookie dough over the marshmallow creme and press down gently.
  8. Bake for 30-35 minutes until edges are browning, top is golden, and marshmallow creme that is visible looks toasty.
  9. Remove from the oven and allow to cool completely, at least four hours, before serving. Use the parchment paper to remove the bars from the pan before slicing.
  10. Store covered at room temperature for up to three days.
