Blueberry Dessert

Blueberry Desert: graham cracker crust, cheesecake topped with blueberry pie filling.

 

A Teaspoon of HomeNothing reminds me more of my Grandma Bevan than this dessert.  As a child I would scrape off all of the blueberries onto the side of my plate and funny thing, I still scrape them off before I take a bite. I love all the flavor burst in such simple dessert. This was a regular treat at grandmas, probably because it is so easy to make. Making it for my family brought back so many great memories.

Blueberry Dessert

Ingredients

  • Crust:
  • 1 pkg. Graham Crackers (crushed)
  • 1/2 c melted butter
  • 1/3 c powdered sugar
  • Filling:
  • 2- 8oz Cream Cheese (softened)
  • 1 c sugar
  • 4 eggs
  • Topping:
  • 1 can Blueberry pie filling

Instructions

  1. Mix crust and spread across 9x13 pan.
  2. Mix filling in blender until smooth.
  3. Bake at 350 degrees for 30 min.
  4. Chill and then add blueberry pie filling.
  5. Delicious with vanilla ice cream.
  6. Makes a 9x13 or 2 pies.

It is the perfect blend of cheesecake/graham crackers  with the sweetness of the berry filling. In fact if blueberries aren’t your thing you could totally add any pie filling. I think I’d still scrape off the filling no matter what it is out of habit. But the taste will blow you away. I loved being able to make a dessert in ten minutes and have in in the oven. Chill and add topping and you are set!
