Chopped Italian Salad

Course: Salad

Ingredients
  

Dressing
  • 1/3 cup Extra Virgin Olive Oil
  • 3 Tbsp Red Wine Vinegar
  • 2 cloves Garlic, minced
  • 3 tsp Dijon Mustard or 1 tsp Dry Mustard
  • 1/2 tsp salt and pepper
  • 1/3 cup Grated Pecorino Romano Cheese or grated Parmesan cheese

Salad
  • 1 head shredded Iceberg lettuce (5-6 cups)
  • 1 head Romaine lettuce (4-5 cups)
  • 1/4 lb or 4 oz Italian Salami, thinly sliced
  • 2 cups shredded Mozzarella cheese
  • 1 15 oz can Chickpeas, drained/rinsed (optional)

Method
 

  1. Add all of the salad dressing ingredients to a small bow or jar.
  2. Whisk everything together or shake to combine.
  3. In a large bowl combine the two lettuces, salami, and salami.
  4. Pour the prepared dressing on top and toss to coat.
  5. Enjoy the salad right a way.
