Ritzy Chicken
Tender chicken breast breaded with yogurt and Ritz crackers makes the perfect dinner for a busy family.

Ingredients
- 8 Boneless skinless chicken breasts thawed
- 2 cups Ritz Crackers
- 1/4 cup Parmesan Cheese grated
- 2 teaspoons garlic salt
- 1 teaspoon seasoned salt
- 1 cup plain yogurt
- 1/4 cup melted butter
Ritzy Chicken
- 1 cup Cream of Chicken
- 1 cup milk
Creamy Sauce
Instructions
- Combine crushed crackers, Parmesan, garlic salt and seasoned salt in a shallow dish.
- Pat chicken dry and then coat with yogurt.
- Dip each piece of chicken in crumb mixture and arrange in 9″x13″ baking dish.
- Drizzle melted butter over the top, if desired. Bake at 350 degrees for 45 minutes.
- Serve with wild rice and top with creamy sauce.

- Combine milk and Cream of Chicken in a saucepan. Stir frequently until combined.

- 1 cup warm water
- 1 tablespoon active dry yeast
- 1 tablespoon sugar
- 1 3/4 cups whole wheat flour
- 1 egg
- 2 tablespoons butter room temperature
- 2 tablespoons molasses
- 1/4 cup honey
- 1 1/2- 2 cups flour
- 1 tablespoon cocoa
- 1 teaspoon salt

Instructions
- Place warm water, yeast, and sugar in a mixing bowl. Allow to proof for 10 minutes (mixture will bubble).
- Add the whole wheat flour, egg, butter, molasses and honey and turn on mixer to low using the dough hook. Add in 1 cup of flour, cocoa and salt and continue to mix on low. Gradually add in the remaining half cup to cup of flour. Dough should pull away from sides of the mixing bowl. Continue to knead on low for about 10 minutes until dough is soft and elastic.
- Turn dough out and roll into a ball. Allow to rise in a warm place, covered for 60-90 minutes until doubled in size.
- Shape into 6 small loaves on a cookie sheet or as 16 rolls in a 9x13 pan and rise again until doubled in size (45-60 minutes).
- Bake at 350 for 27-30 minutes for loaves or about 20 minutes for rolls.
