What is a German Pancake?

A Dutch baby pancake, sometimes called a German pancake, a Bismarck, or a Dutch puff, is a sweet popover that is normally served for breakfast. It is made with eggs, flour, and milk, and usually seasoned with vanilla and cinnamon, although occasionally fruit or another flavoring is also added. It is baked in a cast iron or metal pan and falls soon after being removed from the oven. It is generally served with fresh squeezed lemon, butter, and powdered sugar, fruit toppings or syrup.

Breakfast in a flash!

I don’t love eggs but German Pancakes are an exception. My mom would make these all the time growing up. I know now that it is an easy way to provide a substantial breakfast in a flash. We would watch in awe as the pancake would rise in the oven.  We were always super eager to eat it fresh out of the oven because it fell fast once removed from the heat.

Instructions
  1. Preheat oven to 450 degrees.
  2. Melt butter in a 9x13 pan.
  3. Beat eggs until creamy. Add salt and milk. Mix well.
  4. Slowly add flour and mix well. (Some people like to blend everything together.)
  5. Pour egg mixture over melted butter. Bake for 15 minutes.

My favorite part still are the edges. They have the perfect airy taste and are a little less eggy then the other parts. We top it with powdered sugar, syrup and fruit. It is always a treat!

Now that I have children of my own I too make these German Pancakes. One pan will feed my kids for a week. It’s the best prepare ahead breakfast I know of. Plus they are getting protein from the eggs which is always a bonus.
