If you are like me summer is always filled with parties. There is no better way to celebrate warm weather than with these apple pie bars. They are quick and easy and something that everyone will love. It tastes great alone but is delicious with vanilla ice cream or whipped cream.

This classic picnic dessert is so quick and easy. It is a simple sugar cookie bar crust with apple pie filling, topped with cookie crust and glazed with powdered sugar. This is one of those desserts that taste like you spent more time on it than you actually did. It is a total game changer for making a delicious dessert in a short amount of time.

Instructions
  1. Preheat oven to 350 degrees and lightly grease 9x13 baking dish. Or you can line it with tinfoil for easier clean up.
  2. In a bowl with mixer, combine butter and shortening.
  3. Add sugar, followed by baking powder and salt and continue mixing.
  4. Add eggs and almond extract and mix until well combined, scraping down the sides of bowl as needed.
  5. Add flour and mix until combined.
  6. Set aside about 1 1/2 cups of dough for topping. Evenly spread remaining dough in the bottom of the cookie sheet.
  7. Bake for about 12 minutes.
  8. Remove cookie sheet from oven and top with apple pie filling then dot filling with remaining dough. I did one inch balls in a checkered pattern.
  9. Bake for about 30 minutes or until top is a light golden brown.
  10. While apple pie bars are cooling, prepare powdered sugar icing.
  11. After ten minutes of cooling, drizzle powdered sugar icing over the apple pie bars.
  12. Let cool completely and then cut. Enjoy!
