A Teaspoon of Home

This is one of my all time favorite salads! It is simple to make but the flavor is explosive. It may be the bacon or the lemony/garlic dressing but this is always a crowd pleaser.

Salad de Maison

Ingredients

  • Dressing
  • Juice of 1 lemon
  • 3 garlic cloves (crushed)
  • 1 t salt
  • 1/2 t pepper
  • 1/4 c vegetable oil
  • Salad
  • 1/4 lb bacon
  • 2 heads of Romaine lettuce (torn)
  • 2 c cherry tomatoes
  • 2/3 c slivered almonds
  • 1/3 c Parmesan cheese (grated)
  • 1 c croutons

Instructions

  1. Make dressing. Combine lemon juice, garlic, salt and pepper. Blend juice with vegetable oil. Let stand a couple hours. Saute' bacon until crisp and chop. In a salad bowl combine lettuce, tomatoes, almonds and bacon. Toss with dressing, cheese and salt and pepper to taste. Garnish with croutons.

One of our favorite restaurants in Salt Lake is the Dodo. This salad is very similar to their house salad/dressing. So for a luxurious salad brought right to your dinner table, this is the choice for you.

Summer Berry Salad

Looking for a refreshing way to serve your favorite summer fruits? This salad will blow you away! I love watermelon and summer fresh berries but this is a slight spin off your typical fruit salad that your guests will love.

Summer Berry Salad

Ingredients

  • 4 cups chopped watermelon
  • 1 lb chopped strawberries
  • 6 oz raspberries
  • 6 oz blueberries
  • 1/8 c packed mint
  • 1/4 c fresh lime juice (about 3 limes)
  • 3 T powdered sugar

Instructions

  1. Add watermelon, strawberries, raspberries, blueberries and mint in a large bowl. In a small bowl, stir together lime juice and powdered sugar. Pour dressing over fruit and berries. Gently toss with a spatula then let it sit in the refrigerator for at least 15 minutes before serving to allow the natural juices from the fruit to start coming out.
