Mexican Street Corn Pasta

A Bold Fusion of Flavor and Comfort

We love trying new recipes and this is one that everyone should try! Female Foodie is one of our favorite sources for quality, mouth-watering dishes that will be instant favorites! This Mexican Street Corn Pasta Salad is one of those recipes! We first tried it last summer during our summer BBQ rotations but at one of our neighborhood lunches someone brought it and we knew we had to add it to our dinner rotation!

If you’ve ever had Mexican street corn (elote)—hot, grilled corn slathered with creamy mayo, tangy lime, chili powder, and crumbly cotija cheese—you know it’s a flavor explosion. Now imagine all of that smoky, tangy, creamy magic wrapped up in a bowl of pasta.

Mexican Street Corn Pasta is the ultimate mashup: part comfort food, part summer street food, and 100% addictive. It’s quick to make, incredibly customizable, and perfect for potlucks, weeknight dinners, or just because you want something different. Let’s break it down.

S’more Blondie Bar

The Ultimate Mashup of Your Favorite Treats

If you’ve ever wished you could capture the gooey, nostalgic magic of a campfire s’more in a portable, shareable dessert, say hello to your new favorite indulgence: S’more Blondie Bars.

These bars combine the chewy, buttery goodness of a classic blondie with everything we love about s’mores — graham crackers, melty chocolate, and toasted marshmallows. No campfire required. Just one bite and you’ll be hooked.

S’more Blondie Bars

Ingredients

  • 1 1/2 cup Butter, softened
  • 1 1/2 cup Brown Sugar
  • 2/3 cup Granulated sugar
  • 2 eggs
  • 4 tsp Vanilla extract
  • 18 Graham Crackers crushed (about 2.5 cups)
  • 3 cups Flour
  • 2 tsp Baking Powder
  • 1 tsp salt
  • 6 Hershey Bars (1.55 oz each)
  • 14 oz Marshmallow Creme

Method

  1. Preheat oven to 350 degrees
  2. Crush or blend the Graham Crackers into crumbs.
  3. In the bowl with a stand mixer, cream together the butter and sugars. Add egg and vanilla and mix well.
  4. Add the graham cracker crumbs, flour, baking powder, and salt. Mix until a crumbly dough forms.
  5. Line a 9×13 inch baking pan with parchment paper. Press 2/3 of the cookie dough into the pan.
  6. Unwrap six Hershey bars and layer them over the cookie dough.
  7. Spoon the marshmallow creme over the chocolate bars and spread it out. Then sprinkle the remaining cookie dough over the marshmallow creme and press down gently.
  8. Bake for 30-35 minutes until edges are browning, top is golden, and marshmallow creme that is visible looks toasty.
  9. Remove from the oven and allow to cool completely, at least four hours, before serving. Use the parchment paper to remove the bars from the pan before slicing.
  10. Store covered at room temperature for up to three days.

Mix and match recipes.

Do you ever mix and match recipes? I kept seeing recipes for apple cheesecake bars and decided to give them a try. Every recipe I found though I liked a portion of the recipe but not the entire idea.
