Anne of Green Gables said “I am so glad I live in a world where there are Octobers!” I have to agree! There is nothing better than the earth’s colorful palate that changes to warm colors. Or the smell of crisp leaves, cinnamon, or pumpkin in the air. But nothing says fall more than the taste and smells of ginger and cinnamon. These white chocolate dipped soft gingersnaps will make your home and your heart feel like fall. They are simple to make and so delicious.

Mixing up a sweet batch of cookies is one of my favorite fall activities. This recipe is not only easy to make but it is also one that will make an impression. Every time I take them to a party or gathering, they are the first cookies to disappear. They are always requested once the weather changes.

White Chocolate Dipped Soft Ginger Cookies

Ingredients

  • 1 c unsalted butter, softened
  • 1 brown sugar, packed
  • 1/2 c powdered sugar
  • 2 eggs
  • 1/2 c molasses
  • 2 3/4 c flour
  • 1 t baking soda
  • 1 t salt
  • 1 T ground ginger
  • 1 t cinnamon
  • 1/2 t ground cloves
  • White chocolate for dipping cookies, about 2 cups

Instructions

  1. Beat butter and sugars until smooth and fluffy, about 3 minutes.
  2. Beat in eggs and molasses.
  3. Add the flour and the rest of the ingredients and mix just until the flour disappears and all ingredients are incorporated on a low speed or by hand.
  4. Using a 1 1/2 inch cookie scoop or spoon, scoop the dough out into balls and place on a cookie sheet lined with parchment paper, or lightly greased.
  5. Place 9 cookies per pan.
  6. Heat oven to 350 degrees and bake for about 10-12 minutes until the cookies are set with a top crust formed.
  7. Cool completely.
  8. When ready to dip, melt the white chocolate in microwave. Heat for 30 seconds at a time, making sure the chocolate doesn't over heat or burn.
  9. Stir with spoon, heat until chocolate melts.
  10. Using a spoon, spread the melted white chocolate over half of the cookie top.
  11. Place on parchment paper or wax paper until chocolate is set and firm.
  12. Enjoy!
