Yummy Mint Stick Brownies

Nothing says winter holidays like mint stick brownies. This sweet treat has been a family tradition for as long as I can remember. It is the perfect blend of chocolate and peppermint, making the ultimate holiday treat.

Mint Stick Brownies

Ingredients

  • 4 (1oz) squares unsweetened baking chocolate
  • 1 c butter
  • 4 eggs
  • 2 c sugar
  • 1 t vanilla
  • 1 1/4 c flour
  • 1/2 t baking powder
  • Frosting
  • 1-2 T milk
  • 2 c powdered sugar
  • 1/4 c butter, softened
  • 1 1/2 t peppermint extract
  • green food coloring
  • Chocolate Glaze
  • 1 1/4 c semisweet or dark chocolate chips
  • 6 T butter

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly spray 9x13 pan with nonstick cooking spray and set aside.
  3. Place the unsweetened chocolate and the butter in a microwave safe bowl.
  4. Microwave in 30 second intervals, stirring in between, until just melted and smooth.
  5. Set aside to cool, stirring occasionally.
  6. With beater, mix eggs, sugar and vanilla for 2 minutes.
  7. Slowly add the melted chocolate and beat to combine.
  8. Turn the beater speed to low and add in flour by the spoonfuls.
  9. Mix until combined.
  10. Pour batter into the prepared pan and bake for 20-30 minutes or until a knife comes out clean.
  11. Cool completely on a metal rack.
  12. When brownies have cooled to room temperature, prepare the frosting.
  13. Combine all of the frosting ingredients and beat until light and fluffy.
  14. Spread frosting over the brownies and then chill in the refrigerator.
  15. While brownies are chilling, prepare the chocolate glaze.
  16. Place chocolate chips and butter in a microwave safe bowl.
  17. Heat in increments of 30 seconds, stirring in between, until just melted and smooth.
  18. Cool slightly and then carefully spread on top of the frosting layer.
  19. Return the pan to the refrigerator to cool.
  20. Cut into squares and serve.

I love making these because they are simple. A quick brownie, then cool and frost. Cool again and add the chocolate topper. You can even make them more festive by adding pink food coloring and crushed candy canes on top.

These mint stick brownies are so rich that you can cut them into small portions and serve a crowd. I love the smaller portions because I don’t feel as guilty eating more than one. My mom taught me that you never serve the exterior 1/2 inch of the pan. So I always cut away from the bubbled edges and serve the leveled brownies. Then we snack on the crunchy exteriors.
