Creamy Tuscan Garlic Chicken

 Creamy Tuscan Garlic Chicken is bursting with flavors of garlic, parmesan and garnished with spinach and sun dried tomatoes.

This creamy Tuscan garlic chicken would definitely be on that list. I was surprised by how simple it was to make, but the flavor is almost indescribable. This recipe I found from The Recipe Critic. She has the greatest collection of quick and easy recipes.

Creamy Tuscan Garlic Chicken

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, thinly sliced
  • 2 T olive oil
  • 1 c heavy cream
  • 1/2 c chicken broth
  • 1 t garlic powder
  • 1 t Italian seasoning
  • 1/2 c parmesan cheese
  • 1 c spinach, chopped
  • 1/2 c sun dried tomatoes

Instructions

  1. In a large skillet add olive oil and cook the chicken on medium heat for 3-5 minutes on each side.
  2. Remove chicken and set aside on a plate.
  3. Add the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese.
  4. Whisk over medium heat until it starts to thicken.
  5. Add the spinach and sun dried tomatoes and let simmer until the spinach starts to wilt.
  6. Add the chicken back to the pan and serve over pasta if desired.
  7. *If you like it extra saucy, double the sauce.

I know something is good when my husband goes back for thirds! Creamy Tuscan Garlic Chicken is really that good! You can make it as a chicken piece for a meal or serve it over noodles. My entire family loved it and I loved the lingering smell from all of those savory ingredients. Not only that, but it reheats perfectly if you’re wanting to reheat it throughout the week.

My only advice, be patient with the sauce. I was expecting it to thicken faster than it did and almost started over because it wasn’t thickening. I feel like it’s a lot like making Alfredo sauce—you heat and then rest and during the rest it thickens. Same goes with this sauce, but the wait is totally worth it!
