I love simple dinners and this basic bruschetta chicken pasta salad is one of my favorites. The flavors are explosive and the dinner so basic. It will leave everyone wanting more!

One of my favorite parts is that it is made of fresh ingredients. I can sneak a few healthy ingredients into the meal and no one will ever know! Fresh tomatoes, onions and basil are in the recipe but sometimes I sneak in a handful of spinach to add color and flavor to the dish.

Bruschetta Chicken Pasta Salad


  • 1 lb. spaghetti pasta
  • 2 large boneless/skinless chicken breasts
  • 2 t Italian seasoning
  • 1 t garlic powder
  • salt and pepper to taste
  • 1/4 c olive oil
  • 2 T minced garlic
  • 2 T chopped red onion
  • 2 T balsamic vinegar
  • 6 Roma tomatoes
  • 1/2 c grated parmesan cheese
  • 2 T fresh basil


  1. Cook pasta according to package directions; drain and rinse in cold water. Transfer to a large bowl and set aside.
  2. While the pasta is boiling, combine the Italian seasoning, garlic powder, salt and pepper in a shallow bowl. Season the chicken on both sides. Heat 1 teaspoon of oil on a grill pan and seat chicken breasts over medium-high heat until browned on both sides and cooked through. (about 6 min each side). Remove from pan and set aside to rest.
  3. Add the olive oil to the same hot pan/skillet. When hot, saute the garlic and red onion until garlic is fragrant (1 minute). Turn off heat. Add the tomatoes, toss them lightly and add the mixture onto the pasta. Add the vinegar, parmesan cheese and basil. Season with salt and pepper to your taste. Slice the chicken; add to pasta. Toss the pasta with all of the ingredients until well combined.
  4. Top with 2 tablespoons of extra parmesan and serve immediately.
