I love starting my day off with a healthy breakfast. For me if I can begin eating good, wholesome foods starting at breakfast, I make healthy choices throughout the day. So this avocado power toast is something that has the power to keep me on the healthy path.

I came across this recipe as I was browsing through my friend Meg’s website MOMSTRONG. She has dedicated her brand to inspiring women, mothers especially, in a way that is truely empowering. She shares recipes, exercises and habits to a healthier life. The internet needs more advocates like her!

Avocado Power Toast by A Teaspoon of Home

Avocado Power Toast

Ingredients

  • 1 piece of Dave's Killer Bread, toasted
  • Low-fat cottage cheese, enough to cover bread
  • Sliced avocados
  • Crushed red pepper flakes
  • A pinch of sea salt

Instructions

  1. Toast your bread.
  2. Spread cottage cheese, enough to cover bread.
  3. Top with sliced avocados or guacamole.
  4. Sprinkle with crushed red pepper flakes and a pinch of sea salt.
  5. Enjoy!

Well she shares her copycat Protein Foundry Toast on her blog. Not only is it simple, but it is absolutely delicious! I’ve made it several ways, including using the guacamole packs from Costco. This makes for a quick breakfast or a meal on the go. Even my kids love this toast.
