Thai Mango Sticky Rice

Thai Mango Sticky Rice by A Teaspoon of Home

Thai mango sticky rice is arguably the most popular dessert in Thailand. With it’s rich flavor and melt in your mouth texture, this will be a recipe that you make on repeat.

Although a little time consuming, the result is absolutely worth the wait! I do love that you can work on other things in the kitchen or home while you wait for this recipe to come together. I am always worried it won’t come together and soak in all of the liquids, but with enough heat and patience, it always works.

Thai Mango Sticky Rice by A Teaspoon of Home

Thai Mango Sticky Rice

Ingredients

  • 1 c sticky, glutinous rice
  • 1 c thin coconut milk
  • 1 c thick coconut milk
  • 4 T coconut cream (optional)
  • 6 T sugar
  • 1 t salt
  • 1 sweet, ripe mango
  • 4 t toasted sesame seeds to garnish

Instructions

  1. Soak the rice for thirty minutes in 1 cup of water and then add the thin coconut milk to it. (Do not drain the water.)
  2. Simmer on a low flame until the rice is cooked and soft. (about 25-30 min)
  3. Simmer and cook the thick coconut milk with the sugar and salt on a very low flame until it starts to bubble up.
  4. Add this to the cooked rice and mix well.
  5. Keep covered for 15-30 minutes until the rice has fully absorbed the coconut milk mixture.
  6. Check the sweetness of the rice and add more sugar if needed.
  7. Serve the rice warm with chilled mango pieces and drizzle coconut cream on top with roasted sesame seeds.
