Simple and Sweet Samoa Truffles

I love Girl Scout cookies, but can’t ever buy too many because they are gone the second I open the box. They are such a temptation that I can’t even have their sweet taste around. Being pregnant, this time of year has been a little insane because I crave everything sweet and salty. Girl Scout cookies are no exception.

I found a couple of copycat Girl Scout recipes on Pinterest. They looked delicious but a little time intensive. Then I found this simple Samoa truffle recipe and immediately my pregnancy cravings kicked in. I raced straight to the store and purchased all of the ingredients and began baking.

Sweet Samoa Truffles

Ingredients

  • 7 oz sweetened, shredded coconut
  • 1 (14 oz) can dulce de leche (thick caramel)
  • 1 (14 oz) can sweetened condensed milk
  • 1 box (11 oz) Nilla wafer cookies, crushed (2 cups)
  • 16 oz Ghirardelli dark chocolate wafers

Instructions

  1. On a large baking sheet, spread coconut into a single layer. Bake in 350 degree oven for 10-15 minutes, until lightly browned. Be sure to flip the coconut every 5 minutes. Remove from oven.
  2. In a bowl, combine coconut, dulce de leche, sweetened condensed milk and cookie crumbs. Stir until well combined.
  3. Line a baking sheet with parchment paper. Scoop one tablespoon of mixture onto the parchment paper. Repeat until all of the mixture is used. Place baking sheet in freezer and freeze for about 30 minutes.
  4. Melt chocolate wafers according to package directions. Dip bottom of each truffle in melted chocolate and return to parchment paper.
  5. Once all truffles are dipped, put the remaining chocolate into a small ziploc bag. Snip off the corner and drizzle over truffles. Store in refrigerator or freezer in an airtight container.

I love how simple these truffles are to make and the fact that they taste identical to my favorite Girl Scout cookie. We finally had to put them on a plate and share them with the neighbors because they were disappearing at a ridiculously fast rate.
