I love cooking, but do you ever get burnt out, especially around the holidays? Christmas is over and I am finally finishing baking all of my holiday treats and sides for the many dinner parties I’ve hosted. Now I am ready to create simple yet flavorful meals for my family.

The first time I tried this slow cooker chicken fajita soup I was hooked! The flavor is so delicious and it literally is one of the easiest meals to cook.

Slow Cooker Chicken Fajita Soup

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 (10.7 oz) cans of cream of chicken soup
  • 1 c salsa
  • 2 c frozen corn
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 1/2 c water
  • 1 t ground cumin
  • 1/2 t dried cilantro
  • 1 c shredded cheddar cheese
  • OPTIONAL TOPPINGS:
  • sour cream
  • diced tomatoes
  • green onions
  • cilantro
  • lettuce
  • diced avocado
  • tortilla strips

Instructions

  1. Spray your slow cooker with cooking spray.
  2. Add chicken to the bottom of the slow cooker.
  3. In a medium sized mixing bowl, mix cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro.
  4. Pour over the top of the chicken.
  5. Cook on low for 4-6 hours.
  6. Remove the chicken and shred with two forks.
  7. Place back into the slow cooker and add shredded cheese.
  8. Continue cooking until cheese has melted about 15 minutes.
  9. Serve with favorite toppings.

I love getting rotisserie chicken from Costco. Sometimes I buy multiples just for the ease and cost of having cooked chicken. I’ll shred it while it’s still warm and place it right into tupperware. So for this recipe I used 3/4 of a rotisserie chicken, I’m always generous on the meat. This made the soup literally a 5 minute prep.

I love soups that you can garnish yourself and this one was no exception. I filled platters of sour cream, avocados, cilantro, tortilla strips and diced tomatoes. This allows every person to individualize their soup to their liking.

I served it to my family Christmas Eve and all I heard was yum, what’s in this soup? It was an instant favorite.
