Need a dessert in a flash? Try these delicious Congo squares. A sweet chocolate chip cookie bar made in a single cookie sheet. They are the best to prep because it takes 10 minutes to mix up and then you toss them in the oven. You get a rich cookie without the hassle of batches.

This is a recipe from my grandma. I don’t remember her making it but I do remember her handwriting on the recipe card that I copied. This was one of the recipes I made sure to have when I went away to college. It is a recipe I make again and again.

Instructions
  1. Warm oil, add brown sugar and mix. Cool.
  2. Add eggs beating after each one.
  3. Then add the baking powder, salt and flour. Next add the chocolate chips.
  4. Pour batter into a prepared cookie sheet. Use a spatula covered in cooking spray to spread the batter to cover the whole sheet.
  5. Bake at 350 degrees for 25-30 minutes.

This is not one of those recipes that works in a 9×13 pan. I tried it once thinking it would be fine and they don’t bake evenly because they are meant to be thin. So for this recipe keep to your cookie sheet.
