Today is my husband’s birthday. So of coarse I made him Churro French Toast bites! These mini french toast bites covered in cinnamon and sugar are a major hit at our house! I love celebrating birthdays but his is by far my favorite. If you know him at all, you will know that he celebrates for the entire month (I’m not even kidding). He loves any excuse to have all of the attention drawn to him. So today I made his favorite breakfast, Churro French Toast Bites.

Instructions
  1. Cut the bread into 9 equal cubes.
  2. Whisk the eggs, milk, and salt in a medium bowl.
  3. Combine sugar and cinnamon in a shallow bowl.
  4. Melt the butter in a fry pan over medium high heat. Don't let the butter brown.
  5. Quickly toss half of the bread cubes in the egg mixture and use your hands to shake off the excess egg. Place the bread cubes in the fry pan and use a wooden spoon to saute them until browned on all sides-about 2-3 minutes.
  6. Remove the bread cubes from the fry pan and straight into the sugar mixture. Toss to coat, then remove onto a plate.
  7. Repeat with the remaining bread cubes.
  8. Serve immediately with syrup or eat plain.
  9. Enjoy!

Seriously for him anything with cinnamon and sugar is a hit! I love that I can make these as simple or complex as I want. Sometimes we make french toast sticks by cutting the bread slices into 3 strips rather than 9 squares. Other times when I don’t want a sugar load for the morning I just make french toast bites and leave off the cinnamon and sugar. When I do french toast sticks I will dip the end in cinnamon and sugar rather than coat the entire stick in churro goodness.

Any way you like it, this is a recipe that is so adaptable. You will literally come back to it again and again. My two year old asks for “cakes” every morning for breakfast. Sometimes the mess of pancakes is too much. I also need variety and these are perfect for my carb loving girl.

The best part is that they are quick and easy! Quick to make but quick to go. I love that I can cut the entire batch before I make them. They go straight from the griddle to our plates.
