For me, nothing says Thanksgiving more than mashed potatoes! I remember one year my grandma was assigned to make potatoes. She used dehydrated potatoes, thinking no one would notice the difference. Boy was she wrong! She was banished from ever making potatoes again for Thanksgiving. I get it, it is laborious and requires a time and dirties lots of dishes, but totally a must for Thanksgiving!

Prepare Ahead Holiday Mashed Potatoes

Ingredients

  • 12 medium potatoes, peeled and quartered
  • 1 (8oz) pkg cream cheese, cubed
  • 1/4 c butter, softened
  • 1/2 c sour cream
  • 1/2 c milk
  • 2 eggs, slightly beaten
  • 4 green onions, finely chopped
  • 1 t salt
  • 1/4 t white pepper
  • 1/4 t nutmeg

Instructions

  1. Boil potatoes in salted water in a large saucepan, cover and cook until tender.
  2. Drain and place in large mixing bowl.
  3. Mash or beat until smooth.
  4. Add cream cheese and butter.
  5. Beat until smooth and stir in sour cream.
  6. In a small bowl, blend milk, eggs, onions and seasonings.
  7. Add to potato mixture and whip until mixture is light and fluffy.
  8. Put into 9x13 greased glass baking dish; cover and refrigerate several hours or overnight.
  9. Bake, uncovered, 45-60 minutes at 350 degrees or until puffed and golden brown.

The hardest part about preparing a Thanksgiving dinner is having the oven/stove space to cook it; as well as the patience to clean the dished needed to prep it. Well, we found the perfect recipe! This recipe gives you the whole experience of making mashed potatoes, but leaves you without the mess—at least on the day of the meal.

You basically create mashed potatoes, add a few special ingredients and then place it in the fridge. Then when you are ready to eat you pop them in the oven to warm them up! This recipe has been a lifesaver for me, especially when I have had multiple dishes to prepare and little space to get them done.
