Lettuce Wraps

Who doesn’t love a good lettuce wrap? I have loved trying out different recipes, and this by far takes the cake!  It has the perfect flavor and so many different textures.  Every time I serve this to friends or family I have to share the recipe.

I think the hardest part of this recipe is the preparation. You have to chop and dice, but it totally can be done ahead of time. Sometimes I even do it the night before. Basically you make the sauce in one pan and the meat in another and then combine in the end.

Lettuce Wraps

Ingredients

  • 1 lb ground turkey or beef
  • 2 T light cooking oil
  • 1 whole onion (small)
  • 1 clove garlic
  • 1 piece fresh ginger (1 inch long)
  • 1 whole red pepper
  • 1/2 c diced water chestnuts
  • 1 head of iceberg or butter leaf lettuce
  • Sauce
  • 3 T Chinese cooking wine
  • 4 T Soy Sauce
  • 1 T Oyster sauce
  • 1 T Peanut sauce
  • 1 T Hoisin Sauce
  • 1 t Sesame Oil

Instructions

  1. Prep the veggies:
  2. Dice the onion and red pepper.
  3. Drain and rinse water chestnuts.
  4. Mince the garlic and ginger.
  5. Cut out the core of the lettuce and give it a rinse.
  6. Prep the sauce:
  7. Mix together the soy sauce, oyster sauce, peanut sauce, hoisin sauce and the sesame oil.
  8. Make the Meat:
  9. Heat a wok or large saute pan over medium heat.
  10. Add the cooking oil to the pan, heat for one minute and then add the diced onion.
  11. Cook the onion for a few minutes.
  12. When it becomes translucent (after 4-5 min), add the garlic and ginger.
  13. Stir fry for 30 seconds, then add ground meat.
  14. Brown the meat, then add red pepper and water chestnuts, stirring constantly.
  15. After another 3-4 minutes add the Chinese cooking wine.
  16. Allow to sizzle and cook for about a minute and then add in the sauce.
  17. Stirring frequently, let this cook for 2-3 minutes.
  18. Sauce should thicken a bit.
  19. Serve with iceberg lettuce and steamed rice.

I love to serve them with steamed rice in butter leaf lettuce but if you like the crunch, use iceberg lettuce.
