I love making dinner, but sometimes making healthy dinners can be a bit of a challenge. So this week I’ve provided a menu that is on the healthier side.

Creamy herb chicken can literally be made start to finish in 20 minutes. So you have no excuse why you can’t cook something fresh for dinner. It is bursting with flavor and goes well with the sweet potatoes too. You can serve them with anything from rice, potatoes to pasta.

Baked parmesan sweet potatoes are a simple way to eat a food bursting with nutrients. Forget baking them for hours on end. This recipe has a healthy sweet potato side ready in 25 min! My kids call them fries because they taste so good!

Looking for a fun new dessert? These pineapple upside down cupcakes are just the treat! They are simple to make and so sweet that they disappear just as fast as you can make them. I loved making something new and my kids loved eating all of the maraschino cherries off of them. Win, win!
