Garden Fresh Tomato Soup

Summertime is always filled with fruitful harvests. In the beginning everything you harvest you enjoy eating but it seems like by the end of the summer you can’t give away your crop fast enough. Well here is your solution for changing up your tomato abundance. This garden fresh tomato soup will leave you wishing you had more tomatoes.

I do not like tomatoes! I usually do not like tomato soup but this recipe IS the exception. It is the perfect mix of favors that leave you wanting more.

Spicy Tomato Soup

Ingredients

  • 1 white onion
  • 1 T butter
  • 4 cups tomatoes
  • 2 c. chicken broth (I use bullion & water)
  • 1 t. basil
  • 1/2 t. paprika
  • 1/2 t. sugar
  • 1 bay leaf
  • 1/8 t. ground nutmeg
  • 1/8 t. red pepper
  • 1/8 t. cloves

Instructions

  1. Saute chopped onion that has been chopped in about 1 T. of butter until limp.
  2. Add one quart of blended tomatoes.
  3. Add remaining ingredients.
  4. Simmer for 30 minutes covered.
  5. Serve with chunks of cheese in bowls or with cream.

Blend up your garden tomatoes or use canned tomatoes and it will taste just as good! I even love eating it cold like Gazpacho.
