I hope I’m not the only person who tries to create healthier meals for my family. Sometimes I’m successful and other times, I fall back on the familiar. This is a new recipe that has made a healthy addition to our family’s dinner menus.

These baked parmesan sweet potatoes are a cinch to make. First you peel and cube the sweet potatoes, toss them in the marinade and into the oven they go. I love my potatoes a little crispy so after I baked them for the set time, I broiled them for a few extra minutes.

Baked Parmesan Sweet Potatoes by A Teaspoon of Home

Baked Parmesan Sweet Potatoes

Ingredients

  • 2 sweet potatoes (peeled and cubed)
  • 2 t minced garlic
  • 1 T olive oil
  • 2 T butter, melted
  • 4 T grated parmesan cheese
  • 1/2 t garlic salt
  • 1/2 t Italian seasoning
  • dried parsley

Instructions

  1. Preheat oven to 400 degrees.
  2. Peel and cube sweet potatoes into 1/2 -1 inch cubes.
  3. Place garlic, oil, butter, salt, parmesan cheese and Italian seasoning in a ziplock bag and mix well.
  4. Throw in the sweet potatoes and shake until well coated.
  5. Place aluminum foil on cookie sheet and lightly spray.
  6. Place coated sweet potatoes onto cookie sheet and spread out evenly.
  7. Bake for 20-25 minutes.
  8. Serve warm and sprinkle with dried parsley if desired.
