Making healthy choice meals is a must. I especially love when I can find something that my family can eat for any meal. This fruit parfait pie can be breakfast, lunch, dinner or dessert.

Ingredients

  • Crust:
  • 2 c old fashioned rolled oats
  • 1 c oat flour (homemade or store bought)
  • 2/3 c honey
  • 3 T coconut oil
  • 1/2 t ground cinnamon
  • 1 t pure vanilla extract
  • 1/8 t salt
  • Filling:
  • 1 1/4 c Vanilla Greek yogurt
  • 2 T honey
  • Topping:
  • fruit of choice

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a pie tin and set aside.
  3. In a large bowl, combine oats, oat flour, cinnamon, vanilla, and salt together. Add honey and coconut oil and mix until dough is combined and sticks together.
  4. Spread the granola into pie pins and press down firmly with a spatula or the bottom of a greased glass cup.
  5. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool completely. Place in fridge or freezer to cool quicker.
  6. Combine yogurt with honey.
  7. Spread the yogurt evenly over cooled granola crust.
  8. Decorate with your favorite fresh fruit. Enjoy immediately or place in the fridge to cool and set.
