Mint Chocolate Chip Cookies

My absolute favorite tastes are mint and chocolate! So when I found this recipe I knew it would be an instant favorite. Most cookies have a vanilla base with chocolate chips to fill them. Yet this cookie has a chocolate base with mint chips. It creates a flavor burst then minute you place it in your mouth.

Mint Chocolate Chip Cookies

Ingredients

  • 2 1/4 c flour
  • 1/3 c cocoa
  • 1 t baking soda
  • 1/2 t salt
  • 1 c butter, softened
  • 3/4 c sugar
  • 3/4 c brown sugar
  • 1 t vanilla
  • 2 eggs
  • 1 (12 oz) package of green mint chocolate chips

Instructions

  1. Stir together flour, cocoa, baking soda and salt.
  2. In a mixer, beat butter, sugars and vanilla until creamy.
  3. Add eggs and beat well.
  4. Gradually add flour mixture and continue beating.
  5. Stir in chips.
  6. If desired, chill dough in the refrigerator to make it easier to work with.
  7. Scoop onto ungreased cookie sheet.
  8. Bake at 350 degrees for 8-10 minutes.

The recipe calls for green mint chips, but I used the Andes Mint chips because they are in season. The green chips really stand out on the chocolate base cookie, but taste so delicious!

I love how simple this recipe is to make and even more, the many complements I receive when I make them. They are an instant crowd pleaser!
