Rice Pilaf

A Teaspoon of Home

I love a good easy side dish for dinner. This rice pilaf is just that! The difference between this rice and plain rice is that it is cooked in chicken broth and butter instead of plain water giving it a burst of flavor.

I love adding cut celery for color and a little texture but also sometimes add almond slices. This is a recipe my whole family loves.

Rice Pilaf

Ingredients

  • 1/2 stick of butter
  • 2 c chicken broth
  • 2 cups of rice
  • 1/2 c celery, chopped

Instructions

  1. Chop the celery and place in pan with butter. Add bullion and bring to a boil. Add rice and simmer for 30 min. Makes 10-12 servings.

Salad de Maison

This is one of my all time favorite salads! It is simple to make but the flavor is explosive. It may be the bacon or the lemony/garlic dressing but this is always a crowd pleaser.

Salad de Maison

Ingredients

  • Dressing
  • Juice of 1 lemon
  • 3 garlic cloves (crushed)
  • 1 t salt
  • 1/2 t pepper
  • 1/4 c vegetable oil
  • Salad
  • 1/4 lb bacon
  • 2 heads of Romaine lettuce (torn)
  • 2 c cherry tomatoes
  • 2/3 c slivered almonds
  • 1/3 c Parmesan cheese (grated)
  • 1 c croutons

Instructions

  1. Make dressing. Combine lemon juice, garlic, salt and pepper. Blend juice with vegetable oil. Let stand a couple hours. Saute' bacon until crisp and chop. In a salad bowl combine lettuce, tomatoes, almonds and bacon. Toss with dressing, cheese and salt and pepper to taste. Garnish with croutons.

One of our favorite restaurants in Salt Lake is the Dodo. This salad is very similar to their house salad/dressing. So for a luxurious salad brought right to your dinner table, this is the choice for you.

Easy Marinated Salmon

People either like fish or they hate it! I don’t love fish, but this salmon is one fishy dish I do enjoy. I have served this to many anti-fish people and they walk away wanting the recipe because it is that good.

Worried your children won’t like it because it is “fish?” Read here about how my family came up with the name pink chicken. Salmon is such an easy, yet sophisticated meal. This marinade will explode your taste buds!

Easy Marinated Salmon

Ingredients

  • 3 pounds of salmon fillets
  • 1/4 c butter, melted
  • 1/4 c soy sauce
  • 1/2 T Worcestershire sauce
  • 1/2 t garlic powder

Instructions

  1. Mix marinade. Place salmon in a tupperware and baste with marinade. Place in fridge for at least an hour. Place salmon, skin side down on grill- or place om sheet of heavy-duty aluminum foil on the grill. Cook until salmon changes color. Turn over and peel off skin. Baste frequently and cook until done, about 15-20 minutes.

The Origin of Pink Chicken

Finding food that children will eat can be a bit challenging especially when you have picky eaters. I was quite picky (and still am), but this meal is one I will always eat!

Several years ago my mom prepared salmon for a family dinner. Once everyone sat down to eat the grandkids looked at the salmon in disgust and asked what it was. We were all quick on our feet and responded “pink chicken.” Without a second thought, we placed the salmon (pink chicken) on their plates and they ate it up!

Ten years later, they still call it pink chicken and it remains to be one of their favorite meals. Sometimes, we have to get creative with naming the food we serve because fish is not appealing to kids, but who wouldn’t like “pink chicken.”

I love this meal because it is simple, but sophisticated. Something that could be served for any age and enjoyed by all.

Peach Cobbler

Welcome summer! How can you celebrate summertime without some sort of cobbler? I love cobbler in dutch ovens but how often do you pull that heavy pot out to cook over your fire?

This cobbler recipe is so simple and can be used over any type of fruit. I chose peaches because we are starting our harvest and have more than we can eat.

Peach Cobbler

Ingredients

  • 8 large peaches
  • 1 cup flour
  • 1 cup sugar
  • 1/2 t salt
  • 1/4 cup shortening
  • 1 egg
  • 1 t baking powder

Instructions

  1. Grease 8" square baking pan.
  2. Peel and slice peaches into pan.
  3. Combine remaining ingredients into dough and crumble dough on top of peaches.
  4. Bake at 350 degrees for 30 min.
  5. Serve warm with vanilla ice cream.
